- Una vez rehogado, echar el vinagre, dejar cocer unos minutos....Cubrir el pollo con agua, poner la pastilla de caldo, dejar cocer, probar y poner a punto de sal....cerrar la olla.
- Tenerla durante media hora a fuego mínimo a partir del giro de la válvula.
- Abrir y comprobar el punto de sal y vinagre. Tiene que sobresalir de vinagre y sal porque pasado el tiempo la tajada de pollo pasadas unas horas lo absorbe, si no quedarían muy sosas y se supone que es para que dure varios días....pero eso va en gustos. Emplatar!!!

- Si se ha reducido el caldo cubrirlo con más agua y dejar cocer unos minutos más y añadir más vinagre si hiciera falta...tiene que estar cubierto de caldo para guardar durante varios días. Está mejor de un día para otro. Veréis que en frío se forma una gelatina. Se puede servir frío, templado o caliente...a gusto de cada uno.
