- Cortar la cebolla en trozos chicos. Echar aceite en una sartén donde vayas a hacer la tortilla, y refreír la cebolla. Después añadir la berenjena troceada y baja la temperatura, y cocer todo junto, tapado, hasta que la berenjena está tierna.
- En un bol echar 4 o 6 huevos, según la cantidad de berenjenas que tengas. Añadir el atún desmenuzado y reservar.
- Cuando la berenjena está tierna, echar encima del refrito, la mezcla de huevo y atún, remover todo para que se mezcle bien, y dejar hacer la tortilla a fuego suave.
- Cuando este echa por debajo unos 10 o 15 minutos más o menos verificar, dar la vuelta, para hacer por el otro lado otros 10 minutos más, verificar si es necesario, para que no se queme
- Reservar y tomar caliente, templada o fría, al gusto de cada uno.
