- Lo primero que vamos a hacer es hornear un poco la masa quebrada, la extendemos sobre un molde, pincharemos con un tenedor para que no se formen burbujas y los meteremos en el horno previamente calentado a 180°C unos 10 minutos hasta que esté un poco tostada


- Cortamos la berenjena en dados no muy pequeños ya que luego los vamos a pasar por la sartén y reducirán su tamaño, en un bol los cubrimos con agua y un poco de sal para quitarles un poco el amargor lo dejaremos unos 5-7 minutos

- Pasamos por la sartén la berenjena una vez escurrida, toque de sal y pimienta. Una vez que estén casi cocinada las añadimos a la mezcla de nata, huevos, queso y nuez moscada, corregimos el punto de sal y pimienta


- Vertemos la mezcla en la masa quebrada cocinada espolvoreamos un poco de queso rallado en mi caso he puesto parmesano para los muy amantes del queso con personalidad. Lo metemos al horno 200°C durante 30 minutos y ya tenemos una quiche para chuparse los dedos!
