- Preparamos los ingredientes, lavamos bien y secamos la berenjena y el pimiento. A las cebollas le quitamos la primera capa. Precalentamos el horno 180ķ°

- Ponemos, el pimiento, las cebollas, la berenjena y la cabeza de ajo en una bandeja de horno. Le echamos un chorrito de aceite de oliva virgen por encima y lo ponemos en el horno durante 1 hora. Yo le pongo papel para que no se me agarre en la bandeja. La berenjena la pinchamos para que no explote al incharse con la calor de horno.

- A la hora, le damos la vuelta a las verduras y le incorporamos los tomates, lo ponemos 1/2 hora más al horno.

- Sacamos y dejamos enfriar. Una vez templado procedemos a pelar las verduras


- Reservamos el caldo que se ha hecho al hornearlo, cogemos 3 dientes de ajo crudos y los pasamos por el picador de ajos y los añadimos al caldo reservado.

- Le añadimos 150 ml de Aove y 50 ml de vinagre (utiliza el vinagre que más te guste, de manzana, de vino, de cava, etc...) le introducimos el comino, removemos.
Lo añadimos a la escalivada.
- Ya tenemos una escalivada lista y preparada, la puedes consumir en frío o caliente, a temperatura ambiente está deliciosa.
