- 1 cebolla
- 1/2 pimiento verde
- 1/2 pimiento rojo
- 1/2 calabacín
- 1/2 berenjena
- 60 g chorizo yo usé picante, pero el que os guste
- 1 filete lomo ibérico adobado (opcional)
- 2 patatas pequeñas
- 200 g tomate triturado
- 1 cucharadita ajo en polvo
- 1/2 cucharadita orégano
- 1 chorrito vino tinto
- Sal y pimienta negra
- Aceite de oliva virgen
- 1-2 huevos

- Empezamos agrupando todos los ingredientes. Cortamos en brunoise la cebolla y en dados los pimientos. Retiramos la piel del chorizo y lo troceamos al gusto. Pelamos las patatas y las cortamos en cubos. Troceamos el filete de lomo adobado. Se me olvidó el huevo.

- Ponemos una sartén amplia al fuego con un chorrito de aceite y cuando esté caliente echamos la cebolla junto con un poquito de sal y el ajo en polvo y dejamos pochar a fuego medio unos 10 minutos. Agregamos los pimientos y los dejamos al fuego 5 minutos. Incorporamos el lomo adobado y lo doramos.



- Agregamos el chorizo y lo salteamos un par de minutos para que suelte la grasa. Añadimos las patatas, removemos y cocinamos 10 minutos a fuego medio.


- Mientras se va haciendo todo, pelamos y cortamos en dados el calabacín. Agregamos el calabacín y dejamos que se vaya haciendo.


- Aprovechamos para lavar y trocear la berenjena en cubos y cuando nuestro calabacín lleve 5 minutos haciéndose, la agregamos a la sartén. Removemos y dejamos al fuego 5 minutos.


- Vertemos el vino tinto y cocinamos a fuego alto un par de minutos para que se evapore el alcohol. Añadimos el tomate triturado, el orégano y un par de golpes de molinillo de pimienta negra, removemos para que se mezclen todos los ingredientes y dejamos cocinar a fuego medio-lento unos 30 minutos, hasta que nuestras verduras estén.



- Agregamos 1-2 huevos y dejamos que se cuaje a fuego medio y tapado unos 5 minutos.


- Ya tenemos nuestro plato, calentito y con un buen pan es una delicia. Espero que os guste!!
